With the days getting colder, we’re using less and less of the grill and more and more of the slow cooker. And while I love a traditional roast, my boys get tired of things fixed the same old way. So, I figured I’d mix it up a little bit and make a roast that had a little kick to it! So, I hope you enjoy this simple recipe that you can put in the slow cooker in the morning and come home at night to a house that smells wonderful and a meal that tastes delicious!
Ginger-Terkyaki Slow Cooker Pot Roast with Sweet Onions Recipe
What You Will Need
2 to 2.5 pound beef roast
1/2 Cup Teriyaki Sauce
2 Tablespoons Ginger Powder
1 Tablespoon Sugar
1 Large Sweet Onion
How to Make It
Start by gathering your ingredients. Mix together your teriyaki sauce, ginger powder and sugar in a large zip lock bag. Add your roast and massage the seasoning into it well. Then place it back in the refrigerator for about an hour to let the roast marinate.
Once you have let your roast set, empty the contents of your zip lock bag into your slow cooker. I like to add about a fourth a cup of water to make sure there is enough liquid to cook the roast in. Now slice your onion and top your roast with onion slices and drizzle with teriyaki sauce.
Cook your roast on low for 8 to 9 hours. When it is done, it should pull apart easily with a fork.
You can serve it on a bed of pasta or rice and with a side of veggies for a warm dinner that tastes, looks and smells divine!
