How to Make Lunch Quick and Healthy and a Tasty Rice and Beans Recipe! #LoveEveryMinute

During the week, I’m pretty busy.  If I’m not taking one child somewhere, I’m picking up a friend for the other.  And one of my very bad habits when I’m in a hurry is not eating great or just skipping the meal all together.  Now, why do I do this?  Well, often it’s because I think creating a healthy meal will take too long or that something I can create quickly won’t be tasty.  But I’m trying to break that habit.  Because when I don’t eat, I get pretty grumpy later on in the day and don’t have the energy I need to keep going.

And earlier this week, I discovered a way to make meals quick, healthy and delicious with Minute Ready to Serve Rice.  Now, let me say, Minute Ready to Serve Rice could not be any easier to make!  As it’s name indicates, it literally takes one minute!  And with tons of different rice options, it’s easy to find one that you’ll love.  I’m personally a brown rice fan – it’s healthier for me and I love the way it tastes.  But I don’t like it plain.  In fact, here lately, unless something is spicy I don’t like it that much at all!  So, after discovering my Minute Ready to Serve brown rice, I set out to create a spicy, tasty dish that would be perfect for lunches in a hurry!

What You Will Need

2 Packages of Minute Ready to Serve Brown Rice

1 Can of Rotel Tomatoes

1 Can of Black Beans

1/2 Sweet Onion

1 Tablespoon of Minced Garlic

1 Tablespoon of Lime Juice

Fresh Cilantro

How to Make It

Start by sauteing your diced onion and garlic.  Once they are done, pour in your black beans and allow everything to cook together.  While you are doing that, open your Minute Ready to Serve Brown Rice and microwave it.  It is so simple to make – simply pull the tops off and microwave for one minute for one container or one and a half minutes for two containers.

Once your rice is ready, mix it and your Rotel tomatoes to your black bean, onion and garlic mixture.  Allow it to simmer for 3 to 5 minutes.  Then remove from the heat and sprinkle your lime juice over the top.

Serve your delicious meal topped with cilantro!

The final result is a perfect mixture of spicy and delicious!  It’s a great source of protein which will keep you full for hours and keeps well in the refrigerator!  In fact, I plan to eat this several times a week without making a big time investment!  I love that it’s a meal I can feel good about eating and that it’s tasty enough that it tempts me each and every day!

    We are BIG fans of Minute rice! My husband gets the simple packs that you can heat up in the microwave and takes them him to school often for lunches! They are easy for him to heat up and still have a wholesome meal away from home! But I need to try your rice and beans combo for a dinner one night. He would be over the moon in love with it!

    I just made a meal similar to that! Not spicy because my stomach can’t handle it but I cooked up chicken and corn in addition the beans and tomatoes! Very delicious!

    I am so glad to see this recipe for beans and rice on here! My youngest who is sooooo finicky ate at a friend’s house and that’s what was served.
