Every year around this time, I can’t help but sit down and rethink the way that I’m living. Because while my year generally starts with the desire to make better choices and live a balanced lifestyle, by the end of the year I often find myself off track. And so each January I go through the task of changing my diet, digging out my gym membership and getting myself back on the road to fitting in my skinny jeans. This year, I’ve been thinking about things I can do to not only get back on track but make it easier to stay on track and while I’ll admit that good old fashioned will-power and motivation definitely play a part in ensuring that I’m meeting my fitness goals, so does having amazing Jif Peanut Powder on hand to fuel my better lifestyle.
Now why Jif Peanut Powder you ask? Well, as many of you know, I’m a sucker for anything that includes rich and creamy peanut butter. I eat in on bananas, on apples, in smoothies and yes, totally in my desserts. And each year as I rethink my eating plan, peanut butter is always the thing that I have the hardest time letting go of. But this year, I’ve found a delicious way to have my peanut butter AND fit into my skinny jeans too with Jif Peanut Powder and a few amazing recipes that make me feel like I’m still indulging in some of my favorite treats while helping me lower calories, boost hunger fighting protein and enjoy the creamy flavor of what in my opinion really should be one of the food major food groups.
Just in case you’re confused, let me clarify before we go on. Peanut butter is awesome. In moderation it’s even a great addition to my diet. BUT it’s also kinda high in fat when I’m trying to drop those holiday pounds. Thinking that I was going to have to start measuring my peanut butter consumption by teaspoons instead of cups, I headed to Walmart to pick up my beloved treat. But as I stood in the peanut butter aisle trying to figure out how much peanut butter I could add into my reduced-fat new year diet, I spotted something different on the shelf. Boasting the same amount of protein but 85% less fat than traditional peanut butter and wearing the Jif name that I’ve loved for so long, the Jif Peanut Powder was calling my name and instantly inspiring ideas that made my new year goal of dropping a few pounds much more appealing.
After trying to decide between the classic peanut powder option which is made from just one ingredient – peanuts – with no sugar or salt added and the chocolate peanut powder which has a touch of sweetness from semisweet chocolate and a dash of sugar, I decided there really was no choice and added both varieties to my shopping cart. After picking up a few additional essentials I headed home with visions of better for me peanut butter goodness dancing in my head.
As soon as I arrived home, I knew I needed to try this new discovery out to see if it could truly be a way to eat peanut butter while working my way back towards those skinny jeans that I do so love. As I pondered the possibilities, I thought about the two times of the day when I desperately want my peanut butter goodness. The first is the morning time so I thought what better place to start than there. After thinking of my favorite morning treat – apples topped with peanut butter – I decided I would whip up an Apple and Peanut Butter Smoothie that has all the taste with less of the fat!
What You Will Need:
1 Apple (Peeled and Cored)
3 Tablespoons of Jif Peanut Powder
6 Ounces of Silk Light Vanilla Almond Milk
1/2 Cup of Plain Greek Yogurt
How to Make It:
I’d by lying if I said this wasn’t the simplest smoothie ever to make! It’s no mess, no fuss and oh so good! To start I simple added my apples (cut into cubes), almond milk, Jif Peanut Powder and greek yogurt into my blender.
With the top on, I then blended it until it was smooth and creamy.
And just like that I had a delicious smoothie that boasts the flavors of my favorite morning snack with less fat but ALL the taste!
Knowing that this is going to be the pre-gym breakfast that will fuel my new year workouts for quite a while to come, I settled into drinking my delicious smoothie while I pulled out my workout clothes and dusted off my tennis shoes. Not surprisingly, this smoothie satisfied my every craving and kept me full for hours, ensuring that I wasn’t tempted to snack. In fact, I was so impressed by how the peanut butter taste came through with each and every sip that I decided I had to put this new Jif Peanut Powder to the test by creating my true downfall when it comes to dropping a few pounds. You see, saying I have a love/hate relationship with peanut butter cups is an understatement. But after discovering how amazing the Jif Peanut Powder had been in my smoothie, I wondered if I could create a peanut butter cup that was just as delicious but without all the guilt.
What You Will Need:
(For the Chocolate)
1/3 Cup of Silk Almond Milk
2 Tablespoons of Plain Greek Yogurt
2 Tablespoons of Dark Chocolate Cocoa Powder
2 Tablespoons of Jif Chocolate Peanut Powder
2 Tablespoons of Chocolate Protein Powder
1 Tablespoon of Calorie Free Sweetener
(For the Peanut Butter)
6 Tablespoons of Jif Peanut Powder
1 Tablespoon of Calorie Free Sweetener
4 Tablespoons of Water
How to Make It:
To start my better for me treat, I mixed all of the ingredients for my chocolate layer in one bowl, including my Jif Chocolate Peanut Powder for a boost of the flavor I love.
Then I mixed together my Jif Peanut Powder, sweetener and water in a separate bowl.
Measuring out and mixing up these two layers only took minutes and once they were done, I was ready to start assembling my peanut butter cups. I began by adding liners to my small muffin pan and then spooned in about a half of a tablespoon of the chocolate mixture into each cup.
After gently tapping my pan on the counter to help the chocolate settle, I repeated the process with my Jif Peanut Powder mixture.
Again I tapped my pan on the counter and then finally added a last layer of chocolate to fill the cups.
My peanut butter cups immediately went into the freezer for about two hours to allow them to set and harden. Once that time was up, I removed them from the freezer, peeled back the wrappers and instantly had a treat that looked amazing!
And wow! Did they ever taste amazing too! Just like that I had peanut butter cups that are delicious, boast my favorite peanut butter flavors but are perfect for munching on guilt free after a trip to the gym. Yes, you heard that right! These delicious morsels of peanut butter goodness fit in with all my new year’s goals, ensuring that I don’t have to give up the flavors I love in order to fit back in my skinny jeans!
