It’s a new year and you better believe I’m working on changing a few things in my life. You see, I’m generally pretty good about sticking to my resolutions until, oh, about the end of swimsuit season. But then bad eating habits just kinda creep up on me. I see the foods that I so love and forget that moderation and balance and my words of the year.
But not this year! This year both the hubs and I are on a mission. We’re changing things up and finding ways to create better-for-us options that fit right in with the lifestyle we want to live After all, neither of us are getting younger and our goals are changing. They are not just about appearance anymore but more about living a lifestyle that make us feel great and gives us the energy we need to keep up with two crazy boys. Now, I’ll admit that making over our eating habits has taken changing out a few things. And definitely cleaning out the pantry. In fact, one of the first things we did was switch out our sugar for Truvia Natural Sweetener! This zero-calorie, stevia-based sweetener has been a perfect substitute for us in things like coffee, tea and lemonade. Since we’ve been having such success with this change, I decided it was time to branch out while changing up our food and create a better-for-you Veggie Delight Pizza using the same sweet taste of Truvia Natural Sweetener products that we’ve come to love.
At first, I thought I was going to be opening tons of our handy, dandy Truvia packets when it was time to get cooking. But when I went to Walmart to stock up, I was surprised to find Truvia Spoonable, a packaged version of our favorite sweetener that is just right for using in the kitchen.
Now for me, this was a total game changer. Finding our natural sweetener of choice in a spoonable version that helps to reduce calories was one of those ah-ha moments. Because right then and there, I knew that those foods I was craving could get an awesome makeover that would fit right in with the lifestyle we are wanting to live.
After stocking up on my Truvia Spoonable, I headed home to surprise the hubs with…wait for it…Veggie Delight Pizza! It’s one of those foods that we usually don’t think we can enjoy but inspired by the Truvia Spoonable, I had come up with a way for us to have our pizza and eat it to (so to speak). By using my favorite sugar substitute in both the crust and the sauce and switching out our regular toppings for fresh veggies, I knew I was on my way to creating a dinner treat the whole family would adore.
As soon as I got home, I started working on my crust.
What You Will Need:
(Makes 2 Large Pizza Crusts)
3 and 1/2 Cups of Flour
1 Envelope of Dry Active Yeast
1 and 1/2 Tablespoon of Salt
1 and 1/2 Tablespoons of Truvia Spoonable
1 and 1/2 Cups of Warm Water
3 Tablespoons of Olive Oil
How to Make It:
To start my crust, I added my flour, yeast, salt and Truvia Spoonable to the bowl of my mixer.
Then, using my bread attachment I mixed the dry ingredients together. Once they were well combined, I slowly poured in my hot water and two tablespoons of my olive oil and let the mixer do all the work for me, combining my dough until it was a sticky consistency.
As soon as my dough was completely mixed, I turned off my mixer, added a little flour to my counter and kneaded the dough for about a minute, finally shaping it into a ball.
Next, I rubbed my ball of dough with the remaining tablespoon of olive oil and placed it in a bowl covered with plastic wrap to rise.
After setting my bowl in a warm, dry place (an oven that has been preheated and then turned off with the door open to release heat works great!), I started work on my pizza sauce while my dough was rising. On both the dough and the sauce of my Veggie Delight Pizza I was excited to use my Truvia Spoonable to improve on recipes that I’ve been using for years! So, onto the sauce I went.
What You Will Need:
3 Cups of Chopped Tomatoes
1 Can of Tomato Paste
2 Tablespoons of Minced Garlic
1 and 1/2 Tablespoons of Olive Oil
1 and 1/2 Teaspoons of Truvia Spoonable
Several Bay Leaves
How to Make It:
I started by using my food processor to dice my tomatoes. Then as soon as they were in my bowl, I sprinkled my Truvia Spoonable over the top of them and mixed it in to sweeten the tomatoes.
Next, I added my olive oil and garlic to a pan over medium heat and browned it slightly. As soon as the garlic started to turn brown I mixed in my tomato and Truvia Spoonable mixture, my tomato paste and my bay leaves.
After mixing everything together, I reduced my heat to low and allowed my sauce to simmer for about fifteen minutes, just long enough to thicken up.
While the sauce for my Veggie Delight Pizza was simmering, I diced zucchini, colored peppers and sweet onion and sat them aside.
Then, as soon as my sauce was ready, I removed my pizza dough from the bowl, beat it down, cut it in half and began to spread it out on a greased pizza pan (I like to use one with holes in the bottom for a crispier crust).
After spreading my dough over the entire pan, I brushed on a teaspoon of olive oil.
Then I started assembling my pizza. First, I removed the bay leaves from my sauce and spread a generous amount onto the crust of the pizza. I have to say here that this sauce is what MAKES this pizza in my opinion. With the taste of fresh tomatoes and just the right amount of sweetness from the Truvia Spoonable, it’s truly drool worthy!
Then I layered on fresh spinach as well as my chopped veggies.
With all my vegetables in place, I sprinkled a half of cup of mozzarella cheese over the top (I didn’t want to add too much cheese and defeat the wholesome creation I was making).
Into the oven my prepared pizza went on 350 degrees for fifteen minutes.
And when I removed it from the oven, I was met with the aroma of delicious, fresh, better-for-you Veggie Delight Pizza.
As I sliced into the pizza and began serving it up, I have to admit I was super proud because this was a pizza that felt like an indulgence but fit right in with the changes we are trying to make to our lifestyle.
