I’ve got a confession to make…I’ve been getting a little bored with some of my healthier lunch options. You all know I’m trying to makeover my eating habits and as I’ve been doing so, I’ve fallen into the trap of fixing the same things every day and well, it’s gotten a little old. Knowing that in order to stay on track with my clean eating plan, I need to come up with some options that get me excited about lunch time, I’ve been exploring in the kitchen. And I have to say, I’ve found a lunch that I have a hard time believing will ever get old. So are you ready to spice up lunch time with me because that’s what you’ll want to do after seeing my Spicy Stuffed Avocados!
I’ve been making bean salad for years because, well, it’s one of my favorite things. So when I discovered I could add my bean salad to one of my other favorite foods – avocado – I knew I had a real winner with Spicy Stuffed Avocados when it comes to delivering big, bold flavors and a better-for me meal.
What You Will Need:
Avocados (Halved and with Seed Removed)
1 Can of Low Sodium Black Beans
1 Can of Spicy Tomatoes and Green Chilies
1 Large Sweet Onion
1 Can of Artichoke Hearts
1/4 Cup of Fresh Cilantro
How to Make It:
Making this dish is so simple! I actually mix up my bean salad at the beginning of the week and then I can whip up lunch in minutes any day I want it. To start I drain and rinse my black beans and add them to a bowl. Then I add in my tomatoes and chilies, my diced sweet onion and my artichoke hearts (pulling them apart).
Next I add in fresh cilantro and squeeze my lemon and lime in.
After mixing together all of my ingredients, I like to let them chill for at least an hour so that the flavors are really bold.
Then, when I’m ready to serve my lunch, I simply use a spoon to create a bowl in my avocado (save the avocado you scoop out).
Next, I spoon my bean salad into my prepared avocado.
Finally I top it with a little more cilantro and some cubed avocado (from what I scooped out originally).
Another little squeeze of lime over the top of my Spicy Stuffed Avocados and I’ve got a quick and easy lunch that is delicious, full of protein and good fats and really pretty too!
This has quickly become a go-to lunch for busy weekdays as well as an easy entertaining idea that really impresses. And since each and every bite delivers big flavors that always satisfy, I don’t have to worry about lunch time being boring!
