I’ll admit that I have a love/hate relationship with food. I love to eat it but with trying to manage my weight, I often hate how full of fat some of my favorite dishes are. I find myself struggling to achieve balance in my diet and so I’ve decided that the only thing to do is create better-for-me versions of my favorite dishes…like this jaw-droppingly good Skinny Chicken Salad.
Seriously, you chicken salad fans, get ready to head to the store because this recipe is uh-mazing! In fact, I have to say that I prefer it to traditional chicken salad which can be loaded with fat from mayonnaise.
What You Will Need:
2 Grilled Chicken Breasts with All Visible Fat Removed
1/2 of a Sweet Onion (Diced)
1/4 Cup of Halved Purple Grapes
1 Dill Pickle (Cubed)
2 Tablespoons of Plain Non-Fat Greek Yogurt
1 Tablespoon of Dill Pickle Juice
1/4 Tablespoon of Red Pepper Flakes
2 Tablespoons Fresh Cilantro
Salt to Taste
How to Make It:
As a note here, I highly recommend using grilled chicken for this recipe – the flavor depth it adds is just amazing. BUT if you don’t have grilled chicken, you can easily substitute any other type of chicken (even canned chicken) to this recipe.
To start my Skinny Chicken Salad, I removed any visible fat from my grilled chicken breasts and cut them up into small cubes.
After placing them in a bowl, I added my diced onion, grapes and pickle.
Next I simply added my plain Greek yogurt, pickle juice, pepper flakes and salt and stirred my mixture together until everything was coated. Now I should mention that the “dressing” on this chicken salad is not heavy. It will just end up lightly coating all the ingredients to ensure that every bite is amazing. With my chicken salad mixed together perfectly, I added in my fresh cilantro, gave my Skinny Chicken Salad one more stir and was ready to serve it.
Let me just say, this is one amazing meal that doesn’t boast tons of calories but is still totally and completely satisfying!
I personally like to serve it on a piece of lettuce, almost creating a wrap, but you can eat it with whole wheat chips or even alone if you prefer.
And the best part is, by making a batch of this at the beginning of the week, I have lunches all week that taste amazing and help me stay on track with my healthy eating goals!
