Having a house full of boys, I’ve learned a few tips and tricks over the years to keep them happy and full. As a busy mom, one of my best kept secret weapons in the fight against hungry boys is…..cereal. It’s a quick snack or meal that’s perfect for any time of the day and let’s be honest, the fact that they can all pretty much make it themselves is a major score for this overworked mama. So, because I know that cereal is a staple of life for a mom of boys such as me, I keep my pantry stocked at all times. Anytime someone comes to the kitchen hungry, it’s the first place they are directed. From a late night snack for the hubby to an after practice treat for my oldest, cereal is truly one of our go-to’s so it stands to reason that I’ve learned to experiment and find ways to cook with it as well. Because while there are few things that beat a bowl of delicious cereal with ice cold milk, on those days when I have a little more time Fruity Pebbles Yogurt Muffins are a much requested treat!
So what makes these muffins so amazing? Well, they come from cereal which makes them pretty awesome in my guys’ book. But more than that, they are a delicious treat that takes the taste of cereal and milk and mesh them together perfectly in a muffin that is just the right size for a variety of hands. But I guess I’m getting a little ahead of myself. Before I tell you all about these muffins, I should be telling you about WHY I make them. Now, as I’ve already mentioned, cereal is big for us. In addition to being quick and convenient, I’m able to stock up on Post Cereal varieties that the whole family loves for prices that I love anytime I go to Walmart. With options like our beloved Fruity Pebbles, Honey Bunches of Oats Honey Roasted and Cinnamon Toasters, it’s easy for me to have snacks on hand any time my guys are hungry.
And with the value prices of Post Cereals, I can stock up without emptying my pocketbook. So, you’re seeing why I love these cereals aren’t you? And since my guys love the tastes of them, it’s a win all the way around…especially during back to school time when the list of things my two kiddos need seems to be a mile long! Once I’ve stocked up, I can rest easy knowing that in the morning, after school or even at night before bed, they can pour a bowl of their favorite cereal and enjoy.
But recently, as I was watching my little guy inhale his Fruit Pebbles, I decided that I wanted to mix things up a little bit with their favorite cereal and create a fun muffin form that tastes like a delicious bowl of cereal and is perfect for snacking on any time of the day. I quickly took stock of the ingredients I already had in my pantry and fridge and then asked my youngest if I could borrow some of his Post Fruity Pebbles to whip up a special treat and of course he was more than happy to let me.
After enlisting his help as well as his box of cereal, we got to work whipping up some amazingly simple and crazy delicious Fruit Pebbles Yogurt Muffins.
What You Will Need:
(For The Muffins)
1/2 Cup of 2% Plain Greek Yogurt
1 Teaspoons of Vanilla Extract
2 Tablespoons of Vegetable Oil
1/8 of a Cup of Baking Powder
1/2 Teaspoon of Salt
1 Cup of Sugar
4 Cups of Flour
1 and 1/2 Cups of Milk
2 and 1/2 Cups of Post Fruity Pebbles Cereal
(For the Glaze/Topping)
1 Cup of 2% Plain Greek Yogurt
1/2 Cup of Confectioner’s Sugar
1 Teaspoon of Vanilla Extract
1/2 Cup of Post Fruity Pebbles Cereal
How to Make Them:
To start my Fruity Pebbles Yogurt Muffins, I preheated my oven to 350 degrees. Then I got to work helping my little guy mix together the ingredients for the base of my muffins. To start, we added our eggs, yogurt, vanilla extract and vegetable oil to the blender and mixed them on low until they were well combined.
Next, we mixed in our sugar, baking powder and salt. As soon as those ingredients were combined, we quickly added in our flour and milk and mixed all the ingredients just long enough to form a thick batter.
With our batter ready, we removed the bowl from our mixer and my little guy poured in two and a half cups of his beloved Fruity Pebbles cereal.
After gently mixing the cereal into the batter using a large spoon, we scooped it into lined cupcake tins sprayed with cooking spray.
Next, we gently tapped the sides of the pan to eliminate any air bubbles and help the batter settle and our Fruity Pebbles Yogurt Muffins were ready for the oven.
We placed them into our preheated oven and cooked them for fifteen minutes, until a toothpick inserted into the middle of them came out clean. Then we immediately removed them from the cupcake tins and placed the yogurt muffins on a rack to cool completely.
Once our Fruity Pebbles Yogurt Muffins were cool, we were ready to get to the really fun part, glazing them and adding more Fruit Pebbles to the top for an unforgettable crunch. To start we mixed together the Greek Yogurt, Confectioner’s Sugar and vanilla extract until it was an even consistency. Then we added our Fruity Pebbles to a separate bowl.
One by one, we dipped the Fruity Pebbles Yogurt Muffins into the yogurt glaze, ensuring that the top of each muffin was completely covered.
Then we immediately dipped the glazed muffin into our waiting Post Fruit Pebbles cereal and rolled it around gently to ensure the top of each muffin was covered with Fruity Pebbles.
After repeating the process on each of our Fruity Pebbles Yogurt Muffins, we had a treat on hand that was perfect for any time of the day.
*Note: Only glaze and add Fruity Pebbles to the yogurt muffins as they are ready to be eaten. I like to keep a container of mixed up glaze in the fridge and seal the prepared muffins in an air tight container so that this creation is always fresh!*
With our Fruity Pebbles Yogurt Muffins perfectly prepared, it was time to put them to the taste test and see if we had found a way to make our favorite cereal even more amazing.
As I watched my little guy bring his new favorite snack to his mouth, it was easy to see that just like cereal, our Fruity Pebbles Yogurt Muffins are perfect for any time of the day!
