With summer in full swing, I’m looking for delicious ways to cool off warm afternoons. Ever since I was a little girl, ice cream floats have been one of my favorite things. There is just something about the creaminess of ice cream paired perfectly with the fizz of the soda. But this summer I decided that instead of doing a standard ice cream float, I’d mix things up a little bit with lightened up homemade ice cream flavored with the same soda that blends so perfectly with this classic creation!
What You Will Need:
(makes 6-8 floats)
3 Cans of Your Favorite Diet Soda (I used Diet Dr Pepper)
1 – 12 Ounce Can of Low Fat Evaporated Milk
1 – 14 Ounce Can of Low Fat Sweetened Condensed Milk
How to Make It:
Honestly, this lightened up ice cream is the simplest thing to make…..ever! To start, I simply poured my low fat evaporated milk, low fat sweetened condensed milk and one can of my diet soda into a prepared ice cream maker, turned it on and let it go! In about 20-30 minutes I had delicious, creamy lightened up soda ice cream.
As soon as the ice cream was ready, I scooped it out into cups and placed any excess ice cream immediately into the freezer.
I loved that my lightened up ice cream already had the flavors of the soda I would use to complete my ice cream float churned into each and every bite!
Finally, I topped my lightened up ice cream float with some light whipped cream and a cherry and added a straw.
Then all that was left to do was sit back, relax and enjoy the sweet taste of summer!
Honestly, this is one of the best ice cream floats that I’ve ever had! By adding the taste of the soda into the ice cream itself, the flavors are elevated to a whole new level! And it doesn’t hurt that this version has less calories that the classic of my childhood either!
So don’t wait! Summer is passing quickly and you won’t want it to end before you get to indulge in this lightened up treat!
