There are few things in life that I find more delightful than a perfect cup of coffee first thing in the morning…or pretty much any other time of the day. In fact, for the hubby and I, coffee is a necessity. It’s the fuel that our busy, busy days run on. And it’s also a treat that we look forward to. But over the years, as much as we love coffee, we’ve discovered that we also adore the flavors of our favorite coffee drinks brought to life in new recipes, like my beloved Caramel Macchiato Poke Cake.
So, where did the idea for this coffee lover’s dessert come from? Well, I’ll be honest and say that when I want to treat myself, a caramel macchiato is my go to. And since discovering that I can whip up this favorite drink in my own home quite easily if I do say so myself with help from International Delight® coffee creamers, it’s been a daily must. In fact, I make sure to keep my fridge stocked with plenty of coffee creamer to make this treasured drink as well as the hubby’s go-to French Vanilla Latte. And when I recently discovered that International Delight® coffee creamers are now available in bigger, better, easier to pour half gallon packaging at Walmart, I knew that life in my home was about to get a whole lot sweeter.
Knowing that not only can I make the perfect cup of coffee to start the day with these half gallon sized International Delight® coffee creamers in flavors like International Delight® French Vanilla, International Delight® Caramel Macchiato and International Delight® Cold Stone Creamery™ Sweet Cream, but I can also cook with them, my mind immediately begin putting together a poke cake dessert that has just the right amount of coffee house inspiration.
What You Will Need:
(For The Cake)
2 Cups of Flour
1 and 1/2 Cups of Sugar
3 Teaspoons of Baking Powder
2 Large Eggs
1 Cup of Sour Cream
3 Tablespoons of Vegetable Oil
(For The Topping)
6 Ounces of Condensed Milk
1/2 Cup of Fresh Brewed Coffee (Cooled)
1/2 Cup of International Delight® Caramel Macchiato
(For The Icing)
4 Cups of Heavy Whipping Cream
1 Cup of International Delight® Caramel Macchiato
How to Make It:
I have to say, my Caramel Macchiato Poke Cake is really simple to make but it does require a little patience and time. To start, I added my flour, sugar and baking powder to the bowl of my mixer and combined it well.
Next, I added in my eggs, International Delight® Caramel Macchiato, sour cream and vegetable oil and turned on my mixer, combining my ingredients just long enough for them to all mix well.
Once my ingredients were combined, I had a light, fluffy cake mix that was ready to go in the oven and already had my beloved caramel macchiato taste in each and every bite.
After pouring my cake batter into a greased pan, I placed in into my oven which was preheated to 350 degrees for forty-five minutes, until the top was golden brown and a toothpick inserted into the middle came out clean. As soon as it was done baking, I removed it from the oven and placed it on a cooling rack to cool completely.
I went on about my day as the smell of my Caramel Macchiato cake filled the house and I’ll be honest, waiting for it to cool completely was hard but with help from a few cups of French Vanilla Latte made with my International Delight® French Vanilla Creamer, I was able to hold off.
Once my cake was completely cool, I used a cookie pop stick to poke holes throughout the cake.
The goal was to have plenty of holes to fill with my soon to be made caramel macchiato topping but to keep them far enough apart so there was plenty of cake in between.
Once I had made the holes in my caramel macchiato poke cake, I pulled out a bowl and added my condensed milk and International Delight® Caramel Macchiato coffee creamer. Next I poured in my cooled coffee and mixed it all together.
With my topping ready and the holes in my Caramel Macchiato Poke Cake waiting to be filled, I poured my mixture over the top of my cake, making sure to fill each of the holes with it.
Into the fridge my cake went to cool off the topping and ensure that it filled each and every hole in the cake in a deliciously amazing way. After allowing the cake to cool for about an hour so the condensed milk would form a thicker filling, I removed it from the fridge and was ready to finally add my frosting. Now, when I say frosting, I really mean fresh made Caramel Macchiato whipped cream….oh, yeah! To make it I simply added my heavy cream and International Delight® Caramel Macchiato coffee creamer to my mixer and turned it on medium/high. After about ten minutes of mixing, I had flavorful whipped cream that was perfect to ice my Caramel Macchiato Poke Cake With.
After adding a thick layer of my Caramel Macchiato whipped cream to the top of my Caramel Macchiato Poke cake, all that was left to do was drizzle a little caramel over the top and let the flavors inspired by my favorite International Delight® coffee creamer take me away.
I have to say, this cake turned out to be this coffee loving mamas dream! Filled with International Delight® Caramel Macchiato flavor in each and every bite, it’s simply perfect with a cup of coffee as a sweet way to start or end each and every day.
