To say that mornings in our home are chaotic is an understatement. With two boys to get out of the door, it seems like we’re always rushing. But lately, I’ve been trying to take time out of our busy morning to make breakfast more of a priority. While my sleepy teen may want to just grab whatever is available and eat it with his eyes closed, my little guy is much more concerned with what I’ll put in front of him on the breakfast table. Knowing this and also taking into account his desire to help in the mornings (with literally everything), I’ve been thinking up easy breakfast ideas that he can help create and that both he and the teen will love to eat. After asking him what his favorite food was that he wished he could have for breakfast and getting the expected answer of pizza, I went to work making his ideal way to start he morning a reality with Mini Breakfast Pizzas.
I knew that I wanted this creation to be super easy to make (remember, I said mornings are crazy at my home). So, to start I headed to the store and stocked up on Johnsonville Fully Cooked Breakfast Patties.
These easy to make sausage patties boast the Johnsonville taste that the whole family knows and loves and since they only take 40 seconds to make in the microwave, they are a quick and easy start to our Mini Breakfast Pizzas! Armed with our Johnsonville Fully Cooked Breakfast Patties, I grabbed a few additional ingredients, pulled my little chef into the kitchen and got to work on a breakfast that he loves making and that the entire family loves to make disappear!
What You Will Need:
1 Package of Johnsonville Fully Cooked Breakfast Patties
6-8 Canned Biscuits (from the Refrigerated section)
1/2 Cup of Shredded Cheese
1 Tablespoon Olive Oil
How to Make It:
These Mini Breakfast Pizzas are a great weekend breakfast but are easy enough for school mornings! To start, I simply laid out my canned biscuits on a greased baking sheet and allowed my little guy to go to work smushing them down and creating a ridge around the side to make the biscuits look like mini pizzas to hold our waiting toppings in.
After brushing the biscuits with a little olive oil and popping them into the over at 350 degrees, I sent my youngest to dress for the day while the biscuits cooked for ten minutes. Once he had his clothes on and the biscuits were partially cooked, I removed them from the oven, set the aside and let him help prepare the remainder of our ingredients.
As he placed the Johnsonville Fully Cooked Breakfast Patties into the microwave to cook, I scrambled up some eggs.
After allowing the sausage patties to cool slightly, we had everything we needed to put together out Mini Breakfast Pizzas quickly and easily. We pulled our prepared biscuits back over to our work are and sprinkled half of our cheese onto them.
Next we added a generous serving of our scrambled eggs.
Finally, my little guy was able to break up the sausage using his fingers and add a patty to the top of each of the Mini Breakfast Pizzas.
After sprinkling the remainder of our cheese over the top, our Mini Breakfast Pizzas went back into the oven for about three minutes on 350 degrees, just long enough to melt the cheese and pull everything together.
Once we had removed them from the oven and allowed them to cool slightly, our Mini Breakfast Pizzas made with Johnsonville Fully Cooked Breakfast Patties were ready to serve.
Where I had thought sitting down to an easy and delicious breakfast was only possible on the weekends, I quickly learned that these Mini Breakfast Pizzas are perfect for any day of the week and satisfy every member of my family with the taste of delicious biscuits, fresh eggs, perfect prepared sausage and cheese.
