It’s hard to believe we’re in the home stretch of the year. Christmas is just a few short weeks away and celebrations are abounding. I have to say, this time of the year is so special in my home. I’m constantly having gatherings and my home is almost always filled with the sounds of laughter and the smell of amazing foods. While that in itself makes me joyful in a way that I can’t even begin to explain, serving up impressive dishes that don’t keep me tied to the kitchen puts me even more into the holiday spirit. So, this year, I’ve come up with a signature holiday dish that takes minimal prep time, almost cooks itself while I’m spending time with guests and has a major wow factor when placed on the table. This Bacon Wrapped Cornish hen recipe is seriously drool worthy and the best part it, it’s a total snap to prepare, making it the holiday gift that keeps on giving!
Now, I know, it’s tradition to cook turkey or ham for the holidays but seriously, do you know how long that takes? Do you realize how close to the kitchen you have to stay for hours on end? This year, I decided I’m just not doing it. But then I realized that I could create an equally impressive dish with a much smaller bird. After heading to Walmart to stock up on essential ingredients like Tyson® Cornish Hens and Wright® Brand Bacon Hickory Smoked, I had no doubt my holiday celebration would be a success! And since I was able to find everything I needed at Walmart for prices that didn’t break the bank, my holiday season became just a little bit brighter!
With my buggy full of all my holiday essentials, I headed home to prove that an unforgettable holiday dish doesn’t have to keep you tied to the kitchen or leave your wallet empty!
What You Will Need:
2 Pack of Tyson® Cornish Hens
1 Package of Wright® Brand Bacon Hickory Smoked
1 Teaspoon of Italian Herbs
1 Teaspoon of Fresh Ground Pepper
8 Ounces of Pure Pomegranate Juice
1 Teaspoon of Maple Syrup
Dash of Cinnamon
1/4 Cup of Pomegranate Arils (for Garnish)
How to Make It:
I’ll admit, I was a little intimidated by the thought of wrapping my Tyson® Cornish Hens in bacon. I thought it would be hard. I thought it would take skill. I could not have been more wrong! To start, I laid out my ingredients and prepared my work space.
After removing my Cornish hens from their packaging, I quickly rinsed them in warm water and then sprinkled my Italian herbs and pepper over the top.
With my easy prep work done, I was ready to add my Wright® Brand Bacon Hickory Smoked. I started by adding two slices on my bacon in the center of my bird. Then I pulled back one slab of the bacon and inserted another across the Cornish hen in the opposite direction, creating a lattice pattern.
I continued to repeat this process until my entire Cornish hen was covered with bacon and the loose ends of the bacon were gently tucked in beneath the bird.
I have to say, it was really as simple as paying attention to the pattern of the bacon and within five minutes, I had both of my Tyson® Cornish Hens wrapped with my one pack of Wright® Brand Bacon Hickory Smoked. After placing my Cornish hens onto a roasting pan, I was ready to put them in the oven.
Into the oven my bacon wrapped Cornish hens went on 375 degrees for seventy minutes.
Once they were in the oven, I quickly added my pomegranate juice, maple syrup and cinnamon to a small pan and brought it to a boil.
Then I reduced the heat and allowed my pomegranate reduction to cook down to a fourth of its initial amount (about 30 minutes) while my bacon wrapped Cornish hens were baking. I was able to go on about my day, prep the house for my guests and even get ready without having to be in the kitchen. I simply popped back in a few times to check my food as the smell of bacon filled my home with a quite inviting aroma!
Once my bacon wrapped Cornish hens had cooked for the full seventy minutes, I removed them from the oven and tested them with my meat thermometer to ensure they were cooked to 180 degrees F.
With the peace of mind that my bacon wrapped Cornish hens were completely cooked and my Wright® Brand Bacon Hickory Smoked was perfectly crispy, I transferred my birds to a serving dish.
Next, I drizzled my pomegranate reduction over the top to add an unexpected pop of holiday flavor.
After sprinkling my pomegranate arils over the top and around the sides, my bacon wrapped Cornish hens were ready to be served.
As I brought them to the table, I immediately heard “oohs and aahs” as everyone spotted the gorgeous pattern of the Wright® Brand Bacon Hickory Smoked.
But then, when I cut into them and revealed the perfectly cooked and juicy meat inside, sounds of wonder changed to sounds of hunger. As everyone dug into this delicious holiday creation, I couldn’t help but pat myself on the back knowing that I had truly created a show stopping meal in a simple way.
Going forward, bacon wrapped Cornish hens will be my go to dish for all my holiday gatherings. With the easy preparation, short cooking time and impressive final result, how could I not win the holiday season by serving up this amazing meal?
