As a busy mom, I can fully admit that I don’t make myself as much of a priority as I often should. But as part of my New Year’s resolutions, I’ve been working on changing that and I’ve started by making better-for-me lunches from Walmart a priority. Now, I know it may sound strange for eating lunch to be a high priority in my goals for the new year but this year, my focus is all about nutrition. As I’ve shared many times before, last year I took control of my life back, dropped the weight that had been creeping up and put a bigger focus on taking care of me. I developed the habit of exercising daily which after a year, has really stuck. But one thing that was hit or miss was my eating habits. I often found myself skipping lunches because I thought I was just too busy or didn’t have anything to eat in the house. I’d let projects take priority over feeding myself right and to be honest, even with the weight loss, I often found myself dragging. So this year for me is all about fueling my body in a better for me way and making nutritious choices throughout the day. And the perfect place for me to start was by finding deliciously simple ways to make lunch a priority.
Knowing that lunches needed to be a priority in my day, I started thinking about the things that have deterred me from eating a balanced lunch over the years. It quickly became evident that I needed options that were convenient, easy and of course delicious. So off to Walmart I went in search of tasty ways to stay on track and continue to work towards a better me in the new year. As soon as I arrived at Walmart, I was pretty certain I was looking for soup options. After all, soup is a quick mealtime solution that I can easily eat at my desk, in between loads of laundry or even on the go. But, in sticking with my better-for-me theme of the new year, I wanted a soup option that I could feel good about. As soon as I rounded the corner and saw the variety of Campbell’s Well Yes!™ Soup options, I was intrigued.
With colorful non-BPA lined cans that immediately caught my attention and delicious sounding varieties like vegetarian Tomato Carrot Bisque which contains a touch of cream, Minestrone with Kale which boasts Ditalina pasta and chickpeas as well as 2/3 of a cup of veggies, Hearty Lentil with Vegetable that has the flavors of chickpeas and roasted garlic in every bite and Hearty Tomato with Roasted Barley that is filled with the flavors of red pepper, garlic and vegetables, I instantly knew that I had found options that would fit in with my busy lifestyle and that I could get excited about. And since I quickly discovered that Campbell’s Well Yes!™ soup are made with nutritious ingredients while having no artificial colors, flavors or ingredients, it just made sense to use them as a starting point for my lunch time makeover. Armed with a variety of soups, I headed home to figure out how to fit these delicious mealtime solutions into my busy schedule and I quickly came up with some tips that are not only making lunch time easy but are also making it my favorite time of the day!
Plan Ahead & Have Plenty of Options
Knowing that one of the biggest obstacles that stands in the way of me enjoying lunch each day is poor planning on my part, I began with the ideas that had struck me standing in the aisles of Walmart. Since I now had plenty of Campbell’s Well Yes!™ soup varieties on hand, I felt confident that it was going to be easier than ever to whip up simple lunches that didn’t feel like an inconvenience in my busy day.
With two servings in each can of Campbell’s Well Yes!™ soup, I could be assured that there was always food on hand when it was time to enjoy lunch. As I looked at the options, I knew that by simply stocking up on a variety of flavors and pairing them with easy grain, veggie and dairy products that are staples in my fridge and pantry, I would never run out of fresh new ideas that helped me get excited about lunch time. With my pantry stocked full of endless tasty and nutritious options, it was time to think about when I wanted lunch to happen.
Make Lunch a Priority
With my variety of Campbell’s Well Yes!™ soup waiting in my pantry, I no longer wanted to put off lunches due to my busy schedule. But, knowing myself, I realized that unless I set aside a time to eat each day, my bad habits were likely to creep back up. Since I haven’t had a set schedule that includes a pre-determined lunch time, I decided to create one. For me it was as simple as looking at my daily routine, determining a time that I’m generally home and blocking it off on my calendar. That way, no matter how busy the mornings or afternoons are, I know that I have a reserved time to eat a balanced lunch that is sure to fuel my day. But even better, the two-serving size cans of Campbell’s Well Yes!™ soup require so little time and effort to make that I didn’t have to carve a large amount of lunch time out of my day. I simply had to allot long enough to pop open a can of my favorite variety, like the creamy and filling Tomato Carrot Bisque.
After a few short minutes on the stove or in the microwave, I had a warm and delicious mealtime solution that was perfect for pairing with a variety of additional ingredients like my favorite combo of cheese, whole wheat crackers and carrots!
In less that five minutes, it was simple for me to whip up a filling and balanced lunch that fit right in with my schedule.
And after seeing how simple it is to put a filling lunch in front of me even when I’m short on time, I was convinced that making lunches a priority is an important part of my busy mom days.
Be Prepared to Take Lunch on the Go
After solving the problem of what to eat and when to eat, the only thing left to figure out was how to still make lunch a priority even when I’m on the go. Admittedly, I’m close to home most days but occasionally, my schedule causes me to be at my son’s school or out running errands during lunch time. Since I had discovered the importance of keeping with my lunch time routine, I decided the only thing to do was figure out a way to make my perfect lunch option mobile. Thankfully, after just a little thought, I discovered that I could make my own reusable snack bags that paired perfectly with my thermos, allowing me to take my Campbell’s Well Yes!™ soup inspired lunches with me wherever I go.
What You Will Need:
Fabric in a Fun Print (Vinyl or Laminated Cotton works best)
Needle and Thread
How to Make It:
These reusable snack bags are so easy to make and are perfect for taking along all the grains, veggies and dairy you need to turn Campbell’s Well Yes!™ soup into a full meal! To start, I measured out a variety of different sizes of my fabric so that I could have a variety of snack bags.
After measuring and cutting my cloth out, I folded it over inside out and matched up the sides, leaving enough fabric at the top so I could create a flap to close my bags.
Next, after sewing along the seam on the outside of each side, I was able to turn my fabric back right side out and I had the shape of a fun little bag that’s the perfect size for chips, veggies and more.
Once I had sewn around the top flap of my reusable snack bags, I cut some small pieces of velcro and attached them to both sides of my fold over flap to ensure that my snacks stayed secure inside.
Then, as a final touch, I added some bright ribbon (this step is completely optional but pretty).
After completing my reusable snack bags, I was able to add crackers, veggies and cheese to them.
Then I simply paired my prepared snack bags with a thermos full of my Campbell’s Well Yes!™ soup and I was ready to go! Now, no matter where I am, when lunch time rolls around I can sit down, open my thermos full of Minestrone with Kale and pair it with my crackers and carrots to create a lunch that is always satisfyingly delicious.
Through prioritizing lunch time and finding easy ways to make sure that whether I’m at home, on the go, busy or bored (ha!) I have options on hand that fill me up and never leave me feeling unsatisfied, I’m making this the year of taking better care of myself, one meal at a time. And through the process I’m discovering that by making lunch a priority, I’m making myself more of a priority and that’s a great step to take on my journey towards a better me!
