Inspired by this amazing deal, I whipped up a Mesquite Pork Tenderloin with Veggie Hash earlier this week and I have to say, it was uh-mazing! The best part is, it took less than thirty minutes to make, ensuring that I was able to deliver real flavor real fast even with my crazy, busy scheduled.
What You Will Need:
1 Sweet Potato
2 Large Zucchini
1 Large Squash
1/2 Cup of Brussel Sprouts
1 Teaspoon of Olive Oil
2 Tablespoons Fresh Rosemary
1 Teaspoon of Lemon Pepper
Salt and Pepper (to Taste)
How to Make It:
This flavorful dinner is so simple that it honestly almost makes itself! To start I diced all my sweet potato and veggies and added them to a large bowl with my olive oil, one tablespoon of rosemary, lemon pepper and salt and pepper. After tossing all my ingredients together to make sure everything was covered evenly, I poured them onto a baking sheet and placed them in the oven on 425 degrees for twenty-five minutes.
While my veggie hash was cooking away to absolute perfection, I fired up the grill, pulled my Smithfield Slow Smoked Mesquite Flavor Loin Filet out of it’s package and grilled it for about fifteen minute per side, just until the inside was no longer pink.
