The start of Spring is exactly one week away and while I still may be in jeans and sweaters, the fact that summer is coming is not escaping me in the least. I know that pretty soon those few extra winter pounds won’t be covered and while I’ve upped my fitness routine to help compensate, this time of year I also like to do a little something that I call the Slimming Cabbage Soup cleanse. I have to say, this is the perfect time of year for this cleanse because it’s still cold enough outside that soup is a welcome lunch and dinner idea. And trust me when I say that this soup is totally drool worthy! But even better, just as the name hints, this easy to make Slimming Cabbage Soup is a great way to drop a few pounds and get summer body ready! Here’s how to make it!
My suggestion is to make a big pot of this soup on Sunday afternoon and then keep it on hand for easy re-heating during the week. Then you can replace your normal lunch or even lunch and dinner if you want to see quicker results (Note: Results may vary. Slimming Cabbage Soup is a great way to replace heavier meals and is low in calories).
What You Will Need:
4 Cups of Shredded Cabbage
1 Cup of Celery
1 Cup of Sweet Onion
2 Cups of Unsalted Chicken Broth
1/2 Cup of Mushrooms
1 Pound of Chicken
3/4 Cup of Cannellini Beans
1 Teaspoon of Cumin
1 Teaspoon of Lemon Pepper Mix
Chopped Spinach, Acocado and Cilantro for Garnish
How to Make It:
This Slimming Cabbage Soup is seriously so easy to make and reheats perfectly, making it a great meal planning tool when you’re looking to drop a few pounds. To start, I added my celery and onion to my food processor and chopped them into fine pieces.
After adding my celery and onion to a large pot, I cooked them just until they were slightly translucent. Then I added in my chopped mushrooms and continued to cook my vegetables together.
Once my veggies were cooked, I added my unsalted chicken broth and cabbage and cooked it until the cabbage was tender (about twenty minutes).
Once the cabbage was tender, I added my seasonings and my thawed, cubed chicken and covered the pot, allowing my chicken to cook just long enough so that it was no longer pink inside. Finally, I added my cannellini beans and stirred the mixture together.
Once my Slimming Cabbage Soup was assembled, I left it on low heat for about an hour to cook all the flavors together and ensure that it was ready. Once it was ready to eat, I spooned out a bowl and then added the rest to an air tight container to keep in the refrigerator for meals later in the week. Finally, to my bowl of soup I added chopped fresh spinach, cilantro and cubed avocado and my Slimming Cabbage soup was complete.
