Certain foods can just take me back to my childhood. One minute I’ll be standing in my own kitchen preparing a dinner or dessert and the next minute, I’m in another place and time, begging to lick the bowl as my mama whips up a family favorite. It’s funny how certain smells and tastes can just do that to you and as a mom, I’ve tried to continue those traditions with my boys. In fact, I’ve got a cookbook full of recipes that my mom used to make for good days, bad days, reward days and pick-me-up days. But out of the whole recipe book, one of my absolutely favorites is her Lemon Lush (sometimes called Lemon Delight). While it’s a pretty popular recipe that I’ve had on numerous occasions, nobody’s Lemon Lush is like my mamas because her secret ingredient is NILLA Wafers (don’t tell her I told you!). While I think a traditional Lemon Lush is good, when you pair it will NILLA Wafers, you’re given something truly amazing. Inspired by my mamas recipe which is a little different and a lot amazing, I’ve created my own Spring Lemon Lush Pie that’s a begged for favorite in my family.
Much like during my own childhood, there are always NILLA Wafers in my home. It’s a favorite of my kids, my hubby’s and mine as well. I mean, let’s face it, there’s nothing paired with a NILLA Wafers that isn’t absolutely delicious…peanut butter, pudding, fruit, jelly, I could go on and on. So anytime I’m at Walmart, I always remember to pick up a box of NILLA Wafers. And since right now I can earn an Ibotta rebate on my NILLA Wafers and Pie Crust purchase, I’ve really been stocking up and creating my kid’s favorite dessert featuring this delicious cookie!

You see, in my mind, any Spring day is a perfect time to create a memory with my Spring Lemon Lush Pie and since I’m able to get my NILLA Wafers to make it extra special along with my HoneyMaid Pie Crust to make it simple at Walmart, it’s become my go to for creating flavorful memories with my family. Honestly, I try to always have the ingredients on hand so that, much like my mama, I can celebrate good grades, game days wins and pretty much any other special occasion by whipping up this delightful treat!
What You Will Need:
(Makes TWO Lemon Lush Pies)
1 Box of NILLA Wafers
2 HoneyMade Pie Crusts
1 Cup of Pecan Pieces
2 (8 ounce) Packages of Cream Cheese
1 Cup of Confectioners Sugar
2 Small Packages of Lemon Pudding
2 Cups of Low-Fat Milk
2 Tablespoons of Fresh Squeezed Lemon Juice
2 Teaspoons of Fresh Lemon Zest
2 Cup of Whipped Cream
How to Make It:
This fresh Spring take on traditional Lemon Lush is a little different (it’s no-bake!) but in my family’s opinion, it’s oh so much better! My mama used graham cracker crusts all the time in her pies and we adored them so I started with a HoneyMade Pie Crust from Walmart. Without the need to actually make my crust for my Lemon Lush Pie, I saved time and got a great taste that my entire family adores. Plus I didn’t even have to turn on the oven! Instead, I simply added 1/4 cup of my pecans to each of my pie crusts, spreading them out to cover the whole pie.
Next, I added my cream cheese and confectioner’s sugar to my mixer and blended it until it was smooth and creamy. *Note: I use a little less sugar in the step because I love the bite of the cream cheese paired with the freshness of the lemon. If you like a sweeter taste, you can add up to a cup of confectioner’s sugar per 8 ounces of cream cheese or even add in whipped cream to this layer.*
Once my cream cheese mixture was perfectly blended, I smoothed it into my pie crust, covering my pecans.
With my bottom layer of my Spring Lemon Lush Pie prepared, I set them aside and started my lemon layer. I like my lemon to be a little tart so I added my lemon pudding mix and my milk to my mixer and blended it until it was thick and creamy. Then I added in my lemon juice and my lemon zest and continued to mix until I had a pudding like consistency.
Once my lemon pudding was prepared, I simply poured it over the top of my cream cheese layer, adding enough to almost fill the pie crust but leaving a little room at the top.
After adding a little more lemon zest to the top of my pie, I was ready for my final layer.
Whipped cream is the topping of this delicious Lemon Lush Pie and while may people use it in the bottom layer as well, I think the lightness of only using it on the top is truly amazing! After allowing my whipped cream to soften so that it would spread on well, I covered my lemon layer with whipped cream and smoothed it all out.
Now, at this point I could have declared my Lemon Lush Pie done and I’m sure it would have been good but inspired by the tastes of my own childhood, I was ready to make it great. Remembering that my mama used to add NILLA Wafers to all of our pies but especially to her Lemon Lush, I grabbed my box of NILLA Wafers and used them to create a border around the outside of my pie. But I didn’t stop there! I wanted my cake to be Spring themed so using five NILLA Wafers, I made the shape of a flower in the middle of my Lemon Lush Pie.
Then, as a finishing touch, I used a little bit of my leftover lemon pudding to make the center of the flower yellow and sprinkled my remaining pecans around the outside of the flower. Then end result was a Lemon Lush Pie that looks totally festive and fun!
My Lemon Lush Pie immediately went into the refrigerator to set and so that I could scour the kid’s bookbags for a good grade or some reason to say we were celebrating. But in all honestly, I was simply serving up a delicious piece of my childhood in a new and amazing way. Once dinner was served, I pulled out my Lemon Lush Pie and immediately, the table was silent.
In addition to the beautiful presentation that was completed with my NILLA Wafers, my family knew what was underneath and they couldn’t wait to enjoy it.
As they wiped the drool from their mouths, I cut my Lemon Lush Pie into pieces and added it to serving plates.
With beautiful layers, a perfect crust and NILLA Wafers in each and every bite, it took regular Lemon Lush to a whole new level!
The tartness of the lemon paired perfectly with the bite of the cream cheese and the sweetness of the NILLA Wafers, HoneyMade Pie Crust and Whipped cream to create perfection in each and every bite. And the addition of the pecans? Well, that just made this dish a Southern girl’s dream!
With it’s perfect Spring makeover and tried and true taste, this Lemon Lush Pie will be making appearances on our dinner table all season long. Hopefully, inspired by their love of NILLA Wafers and their mama’s cooking, one day my boys will carry on this tradition and watch their own children’s face light up at the sight of a beautiful NILLA Wafers topped Lemon Lush Pie.
