What You Will Need:
(For The Ice Cream)
1 and 1/2 Cups of International Delight® Cold Stone Creamery™ Sweet Cream Creamer
1 and 1/2 Cups of Heavy Whipping Cream
3 Egg Yokes
3/4 of a Cup of Sugar
1 Cup of Chilled Brewed Coffee
(For the Floats)
1 Cup of Cold Coffee
1/2 Cup of Heavy Cream
1/2 Cup of International Delight® Cold Stone Creamery™ Sweet Cream Creamer
How to Make It:
This simple ice cream recipe is so easy to make and I love whipping it up in big batches and storing it in the freezer so I can create perfect Sweet Cream Coffee Floats any time my coffee-loving heart desires. To start, I added my eggs and egg yokes to my mixing bowl along with my sugar.
Next, I mixed together my heavy whipping cream and International Delight® Cold Stone Creamery™ Sweet Cream Creamer in a pot. With it’s rich, creamy flavor that automatically makes me think of homemade ice cream, my International Delight® Cold Stone Creamery™ Sweet Cream Creamer was the perfect ingredient to make this ice cream truly amazing!
After mixing my creamer and heavy cream together well, I placed my pot on the stove over medium heat and allowed it to heat just long enough to form bubbles around the sides of the pot without causing the liquid to boil. As soon as it was piping hot, I removed my pan from the heat and poured one cup of the mixture SLOWLY in the bowl that contained my eggs and sugar, beating the mixture the entire time. *Note: It is important to perform this step slowly and continue mixing throughout so that the hot liquid does no cook the eggs.*
Once my egg mixture was frothy and well mixed, I allowed it to cool slightly and then poured it into my remaining creamer and heavy cream mixture.
Back onto the stove my entire ice cream base went over medium heat for long enough for it to thicken. Whisking it the whole time it was on the stove, I waited until it was transparent when I dipped a spoon it it and them removed my pan from the heat. As my last ingredient in my Sweet Cream coffee ice cream, I of course poured in my brewed and cooled cup of coffee and whisked everything together well.
With my ice cream base complete, I poured it into an air tight container and cooled it overnight in the refrigerator.
The next day, with my Sweet Cream coffee ice cream base ready to be churned, I pulled out my ice cream attachment for my mixer, poured the mixture in and allowed it to churn for about twenty minutes, until it was perfectly creamy and delicious!
With my Sweet Cream coffee ice cream made, I put it back into a container, stored it in the freezer (the consistency of this ice cream is similar to soft serve and while it can be used immediately, I like to allow it to freeze solid) and prepared the rest of my ingredients for my Sweet Cream Coffee Floats.
Once I had brewed and chilled my coffee for my floats, I pulled my perfectly flavored ice cream that, thanks to the addition of International Delight® Cold Stone Creamery™ Sweet Cream Creamer boasts a rich, sweet flavor out of the freezer and pulled back out both my heavy cream and my creamer. After adding both ingredients to my mixer, I turned it on and allowed the mixer to go to work whipping up some easy Sweet Cream flavored whipped cream to top my floats.
While my whipped cream was making, I used an ice cream scoop to dip out two beautiful scoops of deliciously flavored Sweet Cream Coffee Ice Cream into each of my waiting float glasses.
Next, I poured my chilled coffee over the top, letting it swirl perfectly with my Sweet Cream Coffee Ice Cream.
Finally, I topped my Sweet Cream Coffee Floats with my freshly made Sweet Cream Whipped Cream and added a straw and a spoon.
Instantly, I had what was essentially the perfect cup of iced coffee taken to a whole new level.
The delicious, rich and creamy flavor of my International Delight® Cold Stone Creamery™ Sweet Cream Creamer infused ice cream mingled with my cool coffee to create a delicious warm weather treat that is beyond compare!
Within seconds, there was a party in my mouth that I hoped would continue forever that was created by the cool, fun mingling of my beloved coffee flavors.
