Su-su-summertime is coming and honestly, this mama is ready! While we’ve had a fabulous school year, those three little months when the boys and I can make memory after memory are my favorite! For us, school is not out yet but it’s oh-so-close and we’re already taking advantage of weekends to plan out fun summer activities filled with fabulous food! Since I make it my goal during the summer months to make everything extra fun and ensure that every moment brings smiles to my boys’ faces, I’ve been thinking up new and creative ways to serve up picnic meals on the porch that have a “smiley” little twist to them. You see, for us summer time is all about experimenting with fun new picnic ideas and in the process of creating our summer menu, we came up with what we think is the best idea ever. Are you ready for it? Grab your kiddos and get ready to make our awesomely fabulous, crazily fun and amazingly delicious Smiley Face Sliders!
Now, how did this idea come to be and why haven’t we been making these for years? It all started with a trip to Food Lion to pick up our family’s staple of McCain Smiles! These fun shaped potatoes that are seasoned with sea salt and made with real potatoes are a summer favorite for my youngest (and my oldest too!). Seriously, any day that I ask what he wants to eat the answer is always McCain Smiles. Knowing that these fun potatoes are going to be served at quite a few picnics this summer, I started thinking about ways to get creative with them. As I thought through one of the most requested summer meals in my family, burgers and fries, inspiration hit! What if I took McCain Smiles and made them a perfect “bun” for tiny little burgers? Would it work? Would it be delicious? The answer to all of these question turned out to be a resounding yes! But before I discovered how much of a summer picnic success this recipe was, I had to learn how to make it.
What You Will Need:
1 Bag of McCain Smiles
1 Pound of Lean Ground Beef
2 Tablespoons of Worcestershire Sauce
1/4 Cup of Shredded Cheese
Fresh Baby Spinach
White American Cheese Slices (Cut into Fourths)
How to Make It:
This fun summer meal is actually crazy easy to make and by using my McCain Smiles as the buns for my Smiley Face Sliders, I was able to combine two favorite flavors into one amazing finger food! To start, I added my McCain Smiles to a baking sheet and cooked them according to the directions on the bag.
While my McCain Smiles were cooking to golden brown perfection, I added my hamburger meat, Worcestershire sauce and cheese to a bowl and mixed it together well.
Once my mixture was ready, I pinched off golf ball sized pieces of the hamburger meat mixture and rolled them into perfectly size patties for my Smiley Face Sliders.
My hamburger patties immediately went onto my heated grill and cooked for about five minutes on each side, until they were perfectly cooked all the way through.
After pulling my mini-hamburger patties off the grill and taking my cooked McCain Smiles out of the oven, I was ready to assemble my Smiley Face Sliders… but not before my oldest did a little taste test to make sure all the fun was deliciously done!
Once he had declared the prepared McCain Smile perfection, I got to work assembling my Smiley Face Sliders. To start, I laid out twelve of my cooked McCain Smiles on a platter.
Then I added a piece of baby spinach to each one (yeah, I added something green because my boys will eat anything served on McCain Smiles and it was the perfect way to sneak it in!).
Next came my perfectly sized hamburger patties and a piece of cheese, followed by another McCain Smile to make the top of my Smiley Face Sliders.
Within minutes, I had the perfect summer meal that paired all the things my children love into one delicious dish! After adding a side of fruit to my platter, my Smiley Face Sliders were ready to be put to the ultimate test – my sons!
As they each reached for one of the Smiley Face Sliders, their eyes lit up and they couldn’t help but laugh! They were thrilled with the fact that I had found the perfect way to combine their favorite McCain Smiles with their favorite meal, burgers, to create a truly fun summer time meal!
While we sat on the porch dreaming of many summer days to come spent with the perfect picnic of Smiley Face Sliders made from McCain Smiles, we knew without a doubt that we had found our signature summer meal.
Just the absolute joy that this fun meal idea brought to my boys was enough to make me want to recreate it time and again in the coming summer months.
And the added bonus that these Smiley Face Sliders were pretty much the best thing we’ve eaten in as long as we can remember ensured that no matter what summer fun we’re planning, we’ll be complimenting it with this delicious dish!
Going forward into the summer months, I know we’ll be spending endless afternoons just like this one outdoors soaking in the sun. We’ll play games on the porch, relax after a day of fun exploring the trails in the woods and simply spend time making summer memories that we won’t soon forget. But more than that, I know we’ll do all these things with our creation of Smiley Face Sliders in hand to make every experience more delicious!

How to Make It
This easy to make pinwheel craft is a fun summer activity that is perfect for a variety of ages. To start, I cut slats that were two and two thirds inches long into each of the four corners of my paper square. Then I let my little guy fold every other corner inwards.
After helping him push the point of the nail through the ends of the pieces we had pulled in, we punched the nail through the center of the paper and into the eraser of our pencil.
We added a fuzzy ball to the center of the flower as a finishing touch and had a fun pinwheel craft that was the perfect way to spin away the summer days, all while enjoying the delicious taste of our McCain Smiles!
