With summer upon us, lots of my family’s activities are revolving around food. For some time now it’s been a goal of mine to feed my family the best organic products available so I’ve been coming up with delicious new ways to create organic meals that are bursting with flavor and bring my entire family running to the dinner table. While I’ll admit that I have an arsenal of family favorites in my trusty cook book, right now our summer must have is nachos. For us, there’s nothing not to love about delicious nachos loaded up with some of our favorite fresh ingredients and since I can now create tastier-than-ever Grilled Pulled Pork Sheet Nachos using Mission Organics® Tortilla Chips, I’ve discovered a new favorite summer meal that we just can’t get enough of!

As a non-GMO project verified tortilla chip that’s available in four varieties including Yellow Corn, Multigrain, Blue Corn and White Corn, they are a fabulous starting point for my Grilled Pulled Pork Sheet Nachos. Add to that, the fact that they have a taste and crunch that my entire family adores and I’ve got the key ingredient for organic summer meal success! Since I stay stocked up on Mission Organic Tortilla Chips, it’s easy to whip up this totally drool-worthy summer dish any night of the week! Here’s how I do it!
What You Will Need
1/2 Bag of Mission Organics® Blue Corn Tortilla Chips
1/2 Bag of Mission Organics® White Corn Tortilla Chips
2 Pound Fresh Pork Roast
2 Tablespoons of BBQ Sauce (make your own with this recipe)
1 Cup of Freshly Shredded Smoked Mozzarella Cheese
2 Cobs of Grilled Corn
1/2 Cup of Red Onions (Diced)
1 Large Avocado (Cubed)
1/2 Cup Fresh Pico de Gallo
1/4 Cup of Green Onions (Diced)
1/4 Cup of Freshly Torn Cilantro
1/4 Cup of Sour Cream
How to Make It
Obviously, since eating organic matters to my family, I always search out as many organic ingredients as possible and my Grilled Pulled Pork Sheet Nachos boast a delicious array of organic ingredients. To start my dish, I have the hubs fire up the grill and cook our pork roast to perfection by grilling it for approximately 25 minutes on each side until it has reached an internal temperature of about 160 degrees.
Once we’ve pulled our pork roast off the grill and allowed it to rest for about ten minutes, we’re able to simply shred it so that it’s the perfect topping for our Grilled Pulled Pork Sheet Nachos.
After mixing my pulled pork with my BBQ sauce (I don’t use much as I’m just looking for a little flavor burst), I’m able to grate my cheese and prepare the rest of my fresh organic ingredients for my delicious dish.
With all of my ingredients ready, it’s time to pull out the main star of my Grilled Pulled Pork Sheet Nachos….the Mission Organic Tortilla Chips! With a delicious crunch in every bite, these are the base that makes these nachos so unforgettable! Since I like to add a little texture and color to my meals, I often mix together my varieties of chips.
Once I’ve spread my chips onto a sheet pan (hence the sheet nachos name), I top them with my perfectly prepared grilled pulled pork.
Next, I sprinkle my grilled corn, shredded cheese and diced purple onions on top. Since I want the cheese to be melty and the onions to be slightly soft, I then place my sheet pan into the oven on 350 degrees for about eight to ten minutes.
Once my cheese is melted to perfection, all that’s left to do is remove my Grilled Pulled Pork Sheet Nachos from the oven and top them to perfection. Now, I fully know that everyone has different tastes but in my home, the more toppings the better…especially when it’s fresh organic toppings that add a delightful burst of flavor! I love to drizzle sour cream over the top of my nachos and then sprinkle on pico de gallo, avocado, green onions and cilantro for a presentation and taste that is amazing!
And since I’ve included only the best organic ingredients in each and every bite, I know that this fun summer snack is sure to satisfy every member of my family.
