During the school year, slow cooker meals are a lifesaver for me! I can put them in, let them go and know that I’ll be able to serve up a delicious dinner just when things get craziest in the evening. Knowing that Slow Cooker meals are pretty much the only way my family eats with our busy back-to-school schedule, I’ve been mixing things up and trying to come up with fresh, new ideas that are sure to satisfy. Since we eat a lot of chicken in our home, it only makes sense that I’d have a few tried and true chicken slow cooker recipes. Of all the ones I’ve tried, our favorite is easy and delicious Slow Cooker Tuscan Chicken and Beans!
What You Will Need:
(Serves 4-6 People)
1 Can (15 ounces) of White Beans (Drained and Rinsed)
2 Cups of Chicken Broth
3/4 Cup of Fresh Parsley (Chopped)
1/4 Cup of Olive Oil
2 Tablespoons of Minced Garlic
1 Tablespoon of Italian Seasoning
1 Teaspoon of Salt
1/2 Teaspoon of Pepper
6-8 Chicken Thighs
How to Make It:
This easy slow cooker dish is perfect for busy weeknights and allows you to plan ahead for a meal that is totally satisfying yet almost makes itself! To start, I added my beans to the bottom of my slow cooker and poured my chicken broth on top of them.
Next, in a small mixing bowl, I added my parsley, olive oil, garlic, Italian seasoning salt and pepper.
After mixing my spices well, I was ready to assemble the rest of my slow cooker meal.
I gently placed my chicken thighs into the slow cooker on top of my beans and topped them with the parsley mixture.
After cooking on low for about four hours (until the chicken is completely cooked), all that was left to do was remove my food from the slow cooker and serve it up in all of it’s perfection!
This entire slow cooker meal is so easy to make and serves up quickly and easily for busy weeknights when you want to put something great on the table but are running short on time!
