Almost. My Honey/Hubby isn’t wild about black-eyed peas but he does love white beans! So I made a combination of the two (3 to 1) to which I added Italian sausage, mushrooms, fennel/anise, onions and toward the end – some julienned fresh escarole (or any other green you prefer!) And I’ve got to admit – it is always divine and devoured!
