With Thanksgiving right around the corner (seriously, where has the year gone?), I’m beginning to think of all the gatherings I’ll be having in the coming weeks. I’m creating menus and planning meals and doing all my prep work to ensure that my holiday season goes off without a hitch. And while I may not have nailed down all the specifics as to what I’ll serve for each get together with friends and family, I know that the star of my Thanksgiving gatherings is sure to be my Butternut Squash Dressing.
Now, any good hostess knows that the holiday season calls for a signature dish and for me, coming up with one that is stunning and drool-worthy has been an ongoing process. But a few years ago, when we moved out into the country and began hosting a variety of get togethers in our home, I really put on my thinking cap. I knew that here in the South, dressing is a Thanksgiving must. But after trying a variety of dressing recipes, I wanted to come up with something that is unique; a dish that everyone knows will be served and looks forward to with anticipation. After taking stock of seasonal flavors and digging deep in my creative little brain, I finally settled on a mixture of perfectly cooked butternut squash, fresh french bread, dried cranberries and a variety of veggies pulled together in a dish that is truly unforgettable. Now, this Butternut Squash Dressing has become as much a part of my Thanksgiving celebrations as turkey or pecan pie and since I know I’ll be making in multiple times during the holiday season, I’ve come up with a few shortcuts to make this can’t miss recipe simple to make (without spending all day in the kitchen!).
To start, I headed to Target to stock up on all my ingredients as well as food storage containers to help with both my prep AND sending home leftovers, which just happens to be as much of a tradition as my Butternut Squash Dressing! What You Will Need:
1/2 of a Large Butternut Squash (Cubed)
3 Cups of Bread Cubes
1/2 Cup of Onions (Diced)
1/2 Cup of Celery (Diced)
3/4 Cup of Dried Cranberries
3 Tablespoons of Olive Oil
2 Tablespoons of Butter
3/4 Cup of Half and Half
1 Tablespoon of Sage
3/4 Cup of Chicken Broth
Salt and Pepper (to Taste)
How to Make It:
This Butternut Squash Dressing is actually very easy to assemble but takes a little prep time…which I DON’T like to do with guests in the house. So, as a general rule, I prepare all of my ingredients in the morning before company arrives and then simply have to mix everything together and bake it while they are in my home. So, early on the morning of my Thanksgiving celebrations, I get up and cut half of my Butternut Squash into cubes.
After adding my cubed butternut squash to my 3.2 Cup Rubbermaid Brilliance container, I pop the lid on and seal it tight. With the leak-proof air tight seal, I know that my squash will stay perfectly fresh, which is really the key to making this stuffing amazing! In fact, I was shocked at what a difference it made to seal my prepared ingredient in these new containers that are totally different from anything else I’ve tried.
After cubing my bread and chopping my onions and celery, I repeated my process of adding them to my completely crystal clear Rubbermaid Brilliance containers and stacked them all up to place in the fridge. I have to say, the stackability of these containers is awesome and is such a space saver when I have a fridge loaded with food!
Knowing that my ingredients would be perfectly fresh and perfectly stored in the small amount of space I had open in my refrigerator, I continued on with my day until my guests arrived. After offering drinks and catching up, I was ready to quickly and easily assemble my signature dish. To start, I preheated my oven to 400 degrees and pulled my Rubbermaid Brilliance containers back out. After popping them open with their easy to work latches, I poured my cubed Butternut Squash on a baking sheet and sprinkled my olive oil and salt and pepper over the top.
Into the oven my squash went for about fifteen minutes, just until they were soft and slightly brown. While my butternut squash was cooking, I added my butter, scallions, onion and celery to a sauté pan and cooked them until my onions were translucent.
Next, I added in my dried cranberries and continued to cook my mixture for two to three minutes.
With everything timed perfectly, my butternut squash came out of the oven as my veggie and cranberry mixture was ready and all that was left to do was pull it all together. I quickly grabbed a bowl and added my half and half, eggs, sage, salt, pepper and chicken broth to it, stirring them all together so they were well combined. Then I poured my fresh bread cubes that had been stored into my Rubbermaid Brilliance container in.
After adding my cooked butternut squash and veggie/cranberry mixture, I stirred everything together to make sure it was well combined.
With my oven turned down to 350 degrees, I greased my pan and poured in my Butternut Squash Dressing mixture. Then I covered it with aluminum foil and cooked it for twenty minutes.
After 20 minutes, I removed my foil from the top of my Butternut Squash Dressing and continued to cook it for an additional 30 minutes, until the top was brown and all my ingredients were cooked to perfection.
Once my Butternut Squash Dressing was ready, I removed it from the oven and added a serving spoon and just like that, I had a side dish that had everyone running to the table because it’s bursting with fall flavors and perfectly compliments any occasion!
Once family and friends had eaten their fill, I pulled my Rubbermaid Brilliance containers back out to store the leftovers and prepare some for all of my guests to take home.
