Coming up with quick, easy and delicious meals is important to me. I love experimenting with different ingredients and coming up with different flavor combinations that allow me to really mix things up and serve up the unexpected. Growing up at the coast, I serve a lot of shrimp but the truth of the matter is, when cooking shrimp you need to add tons of flavor! That’s part of the reason that I often serve my shrimp on salads. However, lately, I’ve been adding bold summer flavors and unexpected greens and out of that has come a totally drool-worthy Shrimp and Brussel Spouts Salad with Mango Sauce! This fancy looking dish is actually fairly simple to make and is totally impressive!
What You Will Need:
(for the Sauce)
1 Mango, Skin and Seed Removed, Cubed
2 Tablespoons of Chopped Cilantro
Juice of One Lime
3 Tablespoons of Cream of Coconut
Salt and Pepper (to taste)
2 Tablespoons of Water
(for the Salad)
16 Ounces of Shredded Brussel Sprouts
16 Ounces of Cooked Shrimp (deveined and peeled)
Cranberries (to garnish)
Walnuts (to garnish)
How to Make It:
This delicious dish that can be served warm or cool is simpler to make than you might imagine. To start, we need to make the sauce so I added all the sauce ingredients to my food process and pulsed them until they were smooth and creamy.
Once my sauce is ready, I set it aside and moved on to the next step of my brussel sprouts salad. To cook my brussel sprouts, I added them to a pot filled with four quarts of salted water and cooked them for two to three minutes. Once they were cooked, I quickly drained them and set them aside.
Next, I moved onto my shrim and cooked it in a large sauce pan over medium heat for three to four minutes, just until they were completely pink. After draining off any excess water, I added them back to my pan.
Next, I added my brussel sprouts and sauce to my pan and tossed it all together.
Finally, after seasoning my brussel spourts salad with salt and pepper, I garnished it with cranberries and walnuts and was ready to serve up this delicious meal!
