What You Will Need
(Makes 24 cupcakes)
1 Pillsbury Filled Pasty Bag Cream Cheese Frosting
1 Box of Pillsbury Yellow Cake Mix
1 Cup of Sour Cream
1 Small Box of Vanilla Instant Pudding Mix
1/2 Cup of Water
1/2 Cup of Vegetable Oil
1 Teaspoon of Vanilla Extract
2 Tablespoons of Cinnamon
2 Tablespoons of Light Brown Sugar
3 Large Apples
2 Tablespoons of Unsalted Butter
How to Make It
By using Pillsbury boxed cake mix and Pillsbury Filled Pasty Bags with Cream Cheese frosting for this recipe, I’m able to take all the hard work out of my creation and still end up with a completely drool-worthy dessert! To start, I blended together my cake mix, sour cream, pudding mix, water, oil, eggs, vanilla extract and 1 tablespoon of cinnamon in my mixer and then immediately transferred it to my linked cupcake tins.
Into the oven they went at 350 degrees for eighteen minutes, just until a toothpick inserted in the middle came out clean. While my cupcakes were baking, I peeled, cored, and diced my apples and added them to a pan with my butter, brown sugar and the remaining tablespoon of cinnamon. After covering them, I allowed my cinnamon apples to cook down to an ooey-gooey mixture (about five to six minutes). Once my cupcakes and filling were cooked to perfection, I removed them from the oven and stove and allowed everything to cool COMPLETELY! *Tip: Frosting will melt if you don’t allow your cupcakes to cool completely!*
Once my cupcakes and filling were cooled, putting together my Cinnamon Apple Cupcakes with Cream Cheese Frosting was super simple! Using a small knife, I cut out the center of my cupcakes, hollowing them out enough to fill them with my cinnamon apples. Next, I added my cooled cinnamon apples to the middle of each of my cupcakes.
