Now that the weather is cooling down a little bit, we’re doing less outdoor grilling and more indoor cooking. While this does mean more time for me in the kitchen, it doesn’t necessarily mean more work. You see, one of my favorite ways to cook entire meals during the winter months is by using foil packets. I can include veggies, proteins and seasonings in one perfectly sized (and easy to clean up) pouch! Recently, I did just that with fresh veggies and salmon to create what is one of my family’s favorite dinners….Lemon Rosemary Salmon and Veggie Foil Packets!
This simple weeknight dinner is high in Omega-3 and low in fat, making it a perfect choice for the entire family! Here’s how to make it:
What You Will Need
(makes 5 Foil Packets)
1 and 1/2 Pounds of Fresh Salmon (cut into single servings)
4-5 Sprigs of Fresh Rosemary
2 Large Lemons (thinly sliced)
2 Large Zucchini
1 Large Sweet Onion
Sea Salt (to taste)
How to Make It
These Lemon Rosemary Salmon and Veggie Foil Packets are one of the easiest dinners I make and since I can just toss the packets away when we’re doing, cleanup is a breeze too! To start, I added a handful of my diced zucchini and onion mixture to the bottom of a large piece of foil.
Next, I placed my salmon on top of the veggies and sprinkled it with a little bit of sea salt. *Note: You can also add a drizzle of olive oil if you would like but I’ve found it’s not necessary.
With my salmon in place, I added a sprig of my fresh rosemary and three slices of lemon to the top.
After sealing my foil pouches around my food by pulling up the sides, folding in the top and pinching the creases, I placed my foil packets on a baking pan and into the oven on 400 degrees for twenty-five minutes.
When I removed my Lemon Rosemary Salmon and Veggie Foil Packets from the oven, I tested the fish to make sure it was flaky and done and then opened them up to serve a completely prepared meal to my family.
This easy weeknight dish is crazy good and so simple to make! In fact, it’s become a go-to dish in our home for nights when we’re busy but still want a delicious meal!
