Inspired by the flavorful variety of Smithfield® marinated fresh pork, I recently decided to put together pulled pork tostadas with wasabi slaw that are seriously drool worthy and a perfect way to achieve real flavor real fast when you need an easy dinner!
What You Will Need
Smithfield Roasted Garlic & Cracked Peppercorn Tenderloin
6-8 Small Soft Taco Shells
1 Tablespoon of Olive Oil
1/2 Head of Purple Cabbage
1/2 Cup of Matchstick Carrots
3 Tablespoons Fresh Cilantro
1 Tablespoon of Mayonnaise
1 Tablespoon of Wasabi Sauce (plus more for topping)
1 Avocado (cut into thin slices)
How to Make It
While the start of this flavorful dish is the Smithfield Roasted Garlic & Cracked Peppercorn Tenderloin from Walmart, the tangy wasabi slaw kicks things up a notch as well! To start this easy meal that delivers real flavor real fast, I had the hubby fire up the grill and put on our Smithfield Roasted Garlic & Cracked Peppercorn Tenderloin, cooking each side until it was perfectly done in the middle. The best part is there was no need to marinate or add flavor….we were able to cook our pork straight out of the packet for a flavor that really makes this dish!
While he was cooking our already perfectly marinated tenderloin, I got to work making the wasabi slaw! To make it, I sliced my purple cabbage super thin and added it to a bowl with my carrots and cilantro.
After adding in my mayonnaise and wasabi sauce, I mixed it together well and set it aside while I prepared my tostadas. Now, I know you CAN buy pre-made tostadas but I like to make a lighter version by making my own in the oven. To do this I simply preheated my oven to 400 and brushed both sides of my small soft tacos with olive oil and sprinkled them with sea salt.
After cooking them for about three to four minutes on each side, they were perfectly crunchy and ready for toppings! With this in mind, we pulled our flavorful Smithfield Roasted Garlic & Cracked Peppercorn Tenderloin of the grill and shredded it.
Then I placed my freshly cooked tostadas on a rack and topped them with the shredded pork.
Once my pork was on my tostadas, I added my wasabi slaw, a slice of avocado and more wasabi sauce for a dish that was literally bursting with flavor in all the right ways!
This easy weeknight dish came together in less than thirty minutes and thanks to the already marinated in flavor of Smithfield® marinated fresh pork, it was a dish that delivered big in so many ways!
As I served it up to my family, I knew that nobody would say dinner was boring or lacking in flavor! Instead, I had a dinner that delivers real flavor real fast and disappears from the table just as quickly!
